Vinification:
Whenharvested, the carefully selected grapes are processed by soft pressing, after which they are fermented partly in steel tanks at a controlled temperature and 10% in barriques. The sparkling base is refined on the fine lees for 7 months with weeklybattonages. Bottle aging lasts at least 24 months.
Tasting:
Strawyellow in colour (with fine and persistent perlage). The noseperceivesnotes of bread crust and yeast stand out with floralscents. In the mouth it is full-bodied and balanced with a long persistence guaranteed by a good acid content.
