Vinification:
At the harvest the best grapes of the company are careful selected and then softly pressed. Then the must is fermented in steel tanks for the first two fermentation days and then fermented in barriques. The sparkling base is aged on the fine lees in barriques for 7 months with weekly battonages. The refinement in bottle in a dark environment lasts at least 72 months. At the degorgement the bottles are filled exclusively with the same wine without adding anything else.
Tasting:
Straw yellow color with very fine perlage. On the nose stand out the notes of pastry, hazelnut, spices such as cloves, star anise, hydrocarbons, green tea and coffee. In the mouth it is of great complexity and remarkable elegance. The evolutionary scents are well balanced by the excellent acidity and the good persistence by a citrus and almond return. Long aging wine.
