During the harvest, the grapes are carefully selected before de-stemming them. After a cold maceration process of 12 hours, they are pressed and the must undergoes fermentation at a controlled temperature. The sparkling wine base so obtained is refined 7 months in steel tanks on fine lees with weekly battonages. Bottling follows with re-fermentation. The aging in the bottle takes at least 26 months.
The shade of pink recalls the colour of a peach flower. The nose perceives red fruit such as cherry and blueberry with hints of bread crust. In the mouth it is balanced with a good acidity and a long persistence.
